Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup baby spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste

Instructions:

  1. Melt the butter in a large skillet over medium heat.
  2. Add the garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side.
  4. Remove the shrimp and set aside. In the same skillet, add the heavy cream and Parmesan cheese, stirring until the cheese is melted and the sauce thickens.
  5. Stir in the spinach and sun-dried tomatoes, cooking until the spinach wilts.
  6. Return the shrimp to the skillet, tossing to coat in the sauce. Season with salt and pepper to taste.
